Well, fake death in opossums is like an uncontrollable reflex. Since Fiddleford is very nervous (and kind of religious) he is very timid. Any scary and dangerous monster can scare him, and this quickly triggers his reflex

Ford's reaction was normal, as if a normal person might see another person having a heart attack. He knows that possums have this reflex, but he has never seen one in real life. Fiddleford had never seen it in college because there was no danger
